1 cup chopped romaine lettuce (rinsed and drained)
1/8 cup red onion (chopped)
1 Roma tomato (sliced)
4 baby carrots (chopped
     
Per person:
2 tbsp. fat-free dressing, ¼ cup salsa or 5-8 squirts of dressing spray
3 ounces lean meat or 2 hard boiled egg whites + 1 whole egg (hard boiled) or 1 veggie burger
1 ounce shredded mozzarella cheese 
     
1) Chop lettuce, onion, tomato and carrots and assemble in pan.
2) Add your choice of protein (meat, eggs or veggie burger) and lightly simmer in a pan.
3) Scoop into a bowl of salad greens and top with cheese and your choice of dressing.
