Even if you're not into the veggie thing, there are tons of things in here. I just got a crock pot Ropa Vieja: This is killer if you like pot roast. 1 white onion, sliced and diced 1 red onion, sliced and diced 1 green pepper, sliced and diced 5-8lb pot roast, preferably a 7 bone roast bone-in or spoon roast. Chuck would work Heat the pot high. Warm 2TBSP Olive oil, then saute the onions until soft and clearing. Saute the peppers until soft. Salt and pepper the roast. Remove the vegetables from the pot and brown the roast on all sides. Return the vegetables. Turn down the heat to simmer. Add 2 cans low-fat, low salt beef broth and enough water to just not quite cover the roast. Add 1 8oz jar sliced green salad olives (brine and all) and 2 oz capers. Chop 3oz cilantro and add. Simmer about 4-6 hours. Go for a long bike ride in the cold and return. Hop in the shower. When done, it should shread with 2 forks. Serve with a nice crusty bread, serve with the strained olives and caper sauce (some drippings, but a slotted spoon sorts it nicely), brown rice and a hearty red wine. But I kinda modified it for a crockpot, because the original recipe called for baking it in the oven...which I thought would dry it out too much. Basically, I took a small brisket (I used a 2-3lb piece of meat, since I'm only feeding 2 people) and rubbed Emeril Essence (you can find this in the spice department at the grocery store) all over it. I wrapped it up tightly in saran wrap and put it in the fridge overnight. The next morning, I prepared the crockpot - put in roughly equal parts of beef stock and your favorite bbq sauce mixed together...I used enough to cover the meat. I had to cut the brisket into a few smaller chunks because my crockpot is small. Place the meat into the stock/bbq sauce, and cook on low for 8 hours. When it's done, I sliced it against the grain...actually, the meat was so tender...it basically fell apart as I was cutting it! Then I used some of the stock/bbq mixture to make more sauce on the side. I spooned out a few ladels of the mix into a saucepan, and added more bbq sauce to it...heat it on low until warm enough. That's pretty much it. I served it on buns, but it was mighty tasty on its own too. Had enough leftovers for 2 more days. |

Subject: RE: HELP! I just got a crock pot My sis got one and loves it. I think I should get one too...would certainly make cooking less of a hassle, esp. with triathloning. She's an accountant and works long hours and doesn't like to cook. I love to cook, but I just don't have a lot of time to do it. |

I've doubled the recipe and it worked just fine--- 1 large Vidalia or other sweet onion, sliced 3 pounds pork butt, rinsed and patted dry Salt and pepper 1 cup barbeque sauce (use your favorite...) 1/2 cup yellow mustard 3 tablespoons tomato paste 1 cup chicken broth 1 lime, juiced hamburger buns, for serving Place onions in the bottom of a 5-quart slow cooker. Season pork butt with salt and pepper. Place in slow cooker on top of onions, fat side up. In a medium bowl, stir together barbeque sauce, mustard, tomato paste, chicken broth and lime juice. Pour over pork. Cover and cook on LOW setting for 6 to 8 hours. Remove pork and let rest for 5 to 10 minutes. Use forks to pull apart the pork for serving. |

I just got a crock pot beef vegetable curry in the crockpot was tonight's dinner: sauteed a large onion, sliced carrots in pan, then added some curry powder, brown sugar, cumin, cayenne pepper, diced chili pepper, minced garlic and grated fresh ginger. Transfer to crockpot. Add 3 cans chickpeas, one diced green bell, cubed stew beef, can no salt added diced tomatos, one baking potato peeled and cubed, and one can veggie broth Cooked on low for 8 hours, then at the end stir in a cup or so of light coconut milk and salt/pepper to season. Spray crockpot with cooking spray, place chicken in crockpot, place cheese on top of chicken. Dump in the soup and milk, and top with the box of stuffing. Drizzle a little melted butter over the stuffing, cook on low 6-8 hours or until chicken is done. |

Cuban Pork Roast: 1 pork roast/pork tenderloin … the one I get is usually around 2lbs, but doesn’t matter a whole lot... much bigger roast might require more of the other ingredients. Italian dressing (I use a light version to cut calories) Put the roast in the slow cooker (if I have time/motivation I might trim fat off of it first). Dump as much Italian dressing on as you want (I usually do 1/3-1/2 bottle). Then put the can of black beans in (I rinse them just a little bit), then the can of tomatoes. Cook on low for 8 hours. Shred meat when done. I do different things with it: serve it over brown rice, put into a tortilla and make a taco, put on rolls for a sandwich. And the leftovers are good both heated up and cold (at least, to my taste).
