Subject: African Peanut Soup
Adjust ingredients as desired.  We basically just through it all in the crockpot and let it sit all day.

Ingredients
1 tablespoon curry powder
2 medium onions, sliced (about 4 cups)
2 teaspoons minced garlic
2 large sweet potatoes (about 2 pounds), peeled and cut into chunks
4 cups low-sodium chicken broth
1 (28-ounce) can whole tomatoes, drained and quartered
3 medium chicken breasts
1 teaspoon cayenne (more if you like the heat)
1 cup peanut butter
1/2 cup coconut milk
Directions
Bake the chicken breasts seasoned with some salt and pepper
In a crockpot add:
Onion, garlic, sweet patatoes, tomatoes, chicken broth, curry powder, cayenne pepper.  Let that cook for a while.  Cut chicken breasts into chuncks.  Add chicken, peanut butter, and coconut milk. Let everything simmer for a few hours in the crockpot.

I had this soup somewhere and I can't recall where- it may have been somewhere in Africa, perhaps Morocco or Tanzania. I do remember it was absolutely excellent.

Your neighbor lady accepts samples.  Just sayin'.  I'd love to try it eventhough it sounds a little odd.

What is funny is that I saw a recipe in Tosca Reno's Eat Clean Vegetarian cookbook for African Peanut soup and I immediately thought of this recipe!   Always looking for a good crock pot recipe that I can make vegetarian and throw in some meat at the end for my hubby.
