I'm thinking I would take the stuffing out and butterfly the chops.  Grill or pan fry normally.  With the stuffing (I'm sure there isn't THAT much), I would cook that and probably mix it with some brown rice or quinoa and throw that in a wok with some other veggies.  Maybe some chopped carrots and onions.  Toss a few peas in there.  You know, anything you got.  If you need additional flavor, 1/4 cup of soy sauce or teriyaki. 

Serve the chop over a pile of sausage/veggie fried rice.

In my house, a stir fry is always a good fall back for leftovers.  Shread chicken, pork, steak, fish...   Ad that to rice and veggies and toss in a wok?  Good eats.

Wow, quadruple post.  It said there was an error and try again later or notify the administrator.  So I tried it over and over again.  Apparently, it WAS working.

What happened to that delete button anyway?  Changed to edit.  Both would be good to delete instances like this.

Put them in a oven safe skillet with some stock or even beer and some rough chopped onions and some garlic.  A good dark malty beer would work.  I suggest Abita Turbodog if you can find it.  I cook with it a LOT.  Cover and set in the oven on a low temp, like 200-250, and just leave it alone for a long time.  It'll break down into some super tender deliciousness.  Top some dirty rice, grits, or polenta with it.  Maybe throw some roasted and chopped jalapenos and cheese into the grits or polenta toward the end of the cooking.

Amazing.  A cook I can relate to!

My general kitchen advice:  Make it how you want to, put what you want in it, and don't be scared to use your imagination.  If it sucks, get some take out and do it differently next time.  Read cookbooks that make for good books, not a collection of steps and ingredients.
