Subject: Any creative cooks around here?
My husband bought some stuffed pork chops from the local meat market but he didn't know what they were stuffed with. He grilled them the other night and it turns out they are stuffed with sausage. Meat stuffed with more meat is a little much for me and they were really salty so now we have 3 of these things left. I'd like to think of something creative to do with them - maybe some kind of soup or jambalaya? I don't know, I'm stuck. Anyone have any creative ideas for what to create out of sausage stuffed pork chops?!

I think you have a good idea to chop them up to be part so a casserole/stew to dilute the salty neatness. How about a stir fry or fried rice or paella? Jumbalia sounds good too, I have just never made it.

I would put the chops/sausage in an iron skillet and let the fat from them coat the pan.  I'd drop in 6-8 sea scallops and cook them in the fat.  In another pan I'd sear some fresh asparagus in a bit of olive oil.  When the scallops and asparagus were done I'd put them on a plate in front of a good IPA beer.......then I'd feed the chops to my dog and enjoy my scallops and asparagus.

Hmmm....

Chop up pork into a small dice and cook in a wok. Stir fry vegetables, add brown rice, then mix in cooked meat and soy for "fried rice". You won't need extra fat because of the pork.

Chop up and cook into a spicy tomato sauce with lots of vegetables to serve over pasta or polenta.

Cut up pork into 1 inch pieces and stew in lots green chili, tomatillo, onion, garlic and white hominy.

How about unstuff the pork chops and use the stuffing separately (or throw it away) and make a casserole with the chops? Dice up the chops and make fried rice or add it to some scalloped potatoes.

You laugh but I asked my son what he wanted for lunch one day and he insisted on hot dogs. I wrapped them in bacon an put them in the smoker for 1.5hrs and they turned out amazing. When you added ketchup the flavor reminds you of when someone makes baked beans with bacon in it.

I would make a red pasta sauce with it. Saute it in the pan first, take it out then add your carrots, onions an celery as a base (at least this is how my family does it). Then add in the tomatoes, etc for the sauce and add the pork chops to give the sauce body and salt.

I would then kindly ask your husband to inquire about the contents of any stuffed meat in the future.

You all are creative. Thanks, now I'll have to see what we have in the pantry because I'm not going back to the store. I have realized our kitchen is a little sad - no wok, I've never bought a scallop or polenta or a tomatillo!

Ha! Yes, he was a little overly excited about his first trip to the new meat market . We don't have a lot going on around here obviously......

You could also put some cream of mushroom sauce (or any kind of tasty gravy) over them and bake them that way.

Oh yeah, jambalaya sounds yummy, with some hush puppies and a good beer.  Mix some ketchup & tobasco for dipping the hush puppies.  Maybe not the most healthful meal, but tasty.

i do too. my husband bought "hint of salt" triscuits. that's code for "no salt at all." he knew i wouldn't eat his triscuits if he did that...

Some good ideas. This is what I would do:

buy some frozen green chile (just the peppers). Saute an onion, garlic, and peppers with the chops (diced). Add a can of stewed tomatos and some ground cumin. there, you have green chile to smother burritos, eggs, or just eat as a soup.
