Subject: Packed Lunches
I am trying to get ideas for healthy and simple(aka cheap) lunch ideas.

One of my issues is that I currently do not have easy access to a fridge or microwave/toaster oven and I need to be able to carry everything with me in a small bag, as in I can't carry around a large insulated lunch bag.

Paleo kits.

Buy beef jerky, dried fruit, and almonds. Put them a in a bag and vacuum seal it. I use it back packing.

Dang that is pretty limiting. Some ideas off the top of my head:

Fruit: apples, oranges, bananas, etc.
Avocado slices
String cheese
Dates
Nuts/trail mix/granola
PBJ sandwich or mix it up with almond butter, apple slices, etc.
Wraps - whole grain tortilla filled with whatever you like
Tuna pouch and celery or crackers
Applesauce
Bars: Clif bar, Lara bar, Kind bar, Power bar

Yeah, not having refrigeration really puts a damper on ideas! I have a small cooler bag that I leave on my desk with a blue ice pack in it that keeps stuff cold enough until lunch, but if that's not an option, I would suggest the following:

Packets of almond butter
packets of Tabasco
packets of mayo
packets/cans of tuna or chicken

All of the above can be room temp and stored in a drawer. Then just bring in fresh veggies or fruit. I have lately been mixing mayo with tuna and dumping it on a big bowl of baby greens for a salad at lunch. Drizzle with Tabasco and it's surprisingly tasty! I also often use apples with almond butter as my go-to snack when traveling.

You can also stash jerky, nuts, applesauce cups or baby food for snacking.

And if you eat oatmeal, you can easily buy the flavored packets (or make your own) and rehydrate with hot water when the time comes.

Oh, and I just remembered the 'power lunch' that I was introduced to at a Rock-n-Roll expo once: keep Tabasco and high quality sardines at your desk. Bring in an avocado. Slice the avocado into chunks and mix with sardines and drizzle with hot sauce. Eat!

PB&J on whole wheat with some fat-free Fig Newtons in a sandwich bag.  Same thing that I carry on long bike rides.

Soup in a thermos for hot soup or make some soup that's intended to be eaten cold. Smoothies are good too.

One of my favorite snacks is a whole wheat tortilla with hummus inside. It's pretty healthy and super portable.

I also pack 3-4 servings of fruit daily.

Not having access to a microwave is pretty limiting. No fridge is definitely manageable. If I had to go without a microwave all the time, I'd probably do some lettuce wraps with a little cheese, other raw veggies, nuts, seeds. I don't eat much meat, but you could throw ham or chicken or turkey in there too. I'd probably make 2-3 big wraps.

I also keep a stash of Larabars and Cliff Bars around.

Check out some of the recipes in The Feed Zone: Portables. They are mostly formulated to be eaten on the bike, so they should be able to last you until lunch without refrigeration.

I used feed zone portables on the B2B half-iron this weekend - the Egg Souffle cup things were really good, so were the rice balls

Jar of Nutella, bagel. Meal done. Any meal. In all seriousness I keep cans of tuna at my desk for times I don't have anything else. I drain it and put a little red white vinegar, salt and pepper on it. Cans of chicken can be done the same way. Fruit is always a good option. I usually have a banana, apple or orange hanging out at my desk. Also trail mix or homemade granola. Cut up some fruit and sprinkle granola over the top. Pair that with tuna for protein and you have an easy and portable lunch.
