Subject: RE: Packed Lunches Yeah, not having refrigeration really puts a damper on ideas! I have a small cooler bag that I leave on my desk with a blue ice pack in it that keeps stuff cold enough until lunch, but if that's not an option, I would suggest the following:
Packets of almond butter
packets of Tabasco
packets of mayo
packets/cans of tuna or chicken
All of the above can be room temp and stored in a drawer. Then just bring in fresh veggies or fruit. I have lately been mixing mayo with tuna and dumping it on a big bowl of baby greens for a salad at lunch. Drizzle with Tabasco and it's surprisingly tasty! I also often use apples with almond butter as my go-to snack when traveling.
You can also stash jerky, nuts, applesauce cups or baby food for snacking.
And if you eat oatmeal, you can easily buy the flavored packets (or make your own ) and rehydrate with hot water when the time comes.
Oh, and I just remembered the 'power lunch' that I was introduced to at a Rock-n-Roll expo once: keep Tabasco and high quality sardines at your desk. Bring in an avocado. Slice the avocado into chunks and mix with sardines and drizzle with hot sauce. Eat! Edited by GLC1968 2013-10-29 1:13 PM
