Hey guys!
I'm looking for some easy meal ideas that I can cook in advance and then freeze until I need them. I was thinking something like 1/2 chicken breast, 1/2 baked sweet potato and side of green beans or carrots. I'm probably going to make a bunch of different flavored batches of chicken and maybe lean pork but I'm stumped on something to switch the sweet potato with.

Also healthy snacks are not in my vocabulary so any ideas there would be awesome!

Thanks guys!

Boiled egg whites are my favorite snack. Two egg whites is somewhere in the neighborhood of 40 calories and the protein holds off the hunger pains for an hour or two most of the time.

Soup or stew- very easy with a slow cooker or just a pot.  Meat/chicken, vegetables, and broth or tomatoes with juice- less for stew, more for soup.  For a starch you can add sweet potato, hominy works great (especially with Mexican spices), rice, noodles, or other starchy veg (carrots, rutabagas, etc), and/or beans.  Add spices and freeze in 2 cup plastic reusable containers.

Change up the way you make your sweet potato too - makes a world of difference!

Grate them up and make a hash of onions, spices, garlic - yumm!
Slice up and bake for sweet potato fries
Thin slice and fry in coconut oil for homemade potato chips
mash with some coconut milk, spices and a little cinnamon/salt

Not sure if these are freezable, but gives you a nice break from the basic baked potato!

Thanks!

I don't know why I only let myself think of boiled eggs as a breakfast item, but having them for a snack is a fantastic idea!

I slice them up and grill them with a nice coat of coconut oil, very tasty.

take a look at some of the meal planning websites where they talk about preparing for up to 30 days - you can pre-make stuff for smoothies (have everything bagged, so you just have to throw in blender); soups etc
