Subject: Venison tenderloin recipes
I got a venison tenderloin for dinner. Any suggestions for how to cook it? I've got a few ideas, but wanted to see if anyone had any show-stoppers. I could cook it in the oven or on the grill. I prefer to grill it.

Here you go, Sir.  Cut the loin into chunks about the thickness of a strip of bacon.  Then wrap them with the bacon.  Season with Montreal Steak Seasoning. Grill them on a hot fire.....sear the outside to hold in the flavor.  The ONLY trick to this is that if you overcook the meat you will lose alot of tenderness and flavor.  Medium rare is best.  If you have to go to Medium go only as far as you need to in order to suiit your tastes. (I know some people don't like medium rare, but deer meat that is overcooked is a waste of flavor and tenderness....yes, I said it twice...it's REALLY important).  Enjoy!  I'm jealous.

i'd take a prime cut like that and give it a good sprinkling of Hawaiian sea salt or even plain Kosher salt. Let that dry brine for a few hours or until the salt 'melts' into the meat. Grill to no more than 138 degrees. Give it a good twist of pepper and serve.

Forgot to add that a board sauce is always nice. http://amazingribs.com/recipes/other_fun_sauces/board_sauces.html.I generally put it on the plates instead of carving on the board. It gives each diner control over how much seasoning they want.


I've done them with just evoo, minced garlic, cracked pepper and a high quality aged balsamic vinegar. Sounds weird, but balsamic rocks with meat.
I haven't done one yet, but that Montreal Steak seasoning with evoo and the natural juices would be really nice. Dump some in the evoo for a couple hours so it can rehydrate and infuse the oil. I'm not sure if the balsamic would be good idea with the Montreal seasoning. I think it would be too much. I love the flavor of that stuff, but nobody else in my family cares for it. So if I'm grilling for the family, I leave it out.

I'm with LB sans bacon typically. Montreal seasoning or just salt n pepper and on the grill briefly. Definitely watch overcooking or it'll be shoe leather.

These are making me hungry. My venison tenderloins are my favorite every year. I'd rather have one of those than a ribeye.

We got a couple of unexpected guests at the last minute, so I made LB's bacon-wrapped recipe and served them as an appetizer.

They were amazing.

My son is still talking about them. . He'd never had venison before and he ate all the ones on his plate and a couple of my wife's.

Now I need to find some more and try the other recipes.

Pretty soon I'm down to only two left at home............the problem is they are both 15 year old girls, and all that goes with them.  I'll trade either of them for a pot roast at this point.    

Still....having someone else feeding Jr. next year is going to put quite a bit of cash back in my pocket.  He took his last college visit on Monday....he goes through those "all you can eat" food lines like a tornado.  LOL

I made another tenderloin tonight. I marinaded it in some soy sauce and brown sugar, then wrapped it in bacon and put it on the grill. I cooked it over direct heat to crisp up the bacon and then indirect until it was medium rare.

I took the leftover marinade and made a sauce with some fresh blackberries that I had in the fridge. It was unnecessary but really good wig the venison.

I may need to take up hunting if this keeps up....
