Subject: Portable breakfast ideas?
I don't like to eat breakfast too soon after waking. I prefer to take a breakfast to work or school and then eat it around 8 or so. Lately, I've been making fruit scones, but I'm also going to try some bran muffins to increase my fiber and decrease the fat and simple flour.

In the past, I've enjoyed peanut butter and banana sandwiches (on wheat, of course), but they're too messy for my current office situation (I'm at the front desk and have to keep it tidy).

Any other suggestions? Any recipe ideas for muffins?

Here is a muffin recipe that is 1/3 C, 1/3F, and 1/3P

Try this:
7/8 c. Splenda (granulated)
1/2 c. natty peanut butter
1/2 c. applesauce (sugar free if you can)
2 egg whites
3/4 c. rolled oats
3/4 c. vanilla protein powder
1 tsp baking soda
1/2 tsp salt
1/4 c chocolate chips (I used grain sweetened)

1. Cream spenda/PB.
2. Add applesauce and egg whites and mix well.
3. Blend oats to flour consistency (almost) and add protein powder, baking soda, salt and chocolate chips. Mix in blender until chocolate chips are roughly 1/4 of original size (not necessary).
4. Add dry to wet and mix.
5. Fill sprayed or papered muffin tin 3/4 full.
6. Bake for (watch this, I'm still experimenting) 30 minutes at 250°F. I actually use a convection oven. Keep an eye on them. They usually get more dark on top than you'd expect, but still taste awesome. Let me know if you get this cooking down.

i've found some good recipes at allrecipes.com

you can search different types of things (muffins, breakfast bars, etc.) and they generally have nutritional information and feeback from other users.

have you tried using wheat tortillas instead of bread kinda like peanut butter and bannana burritos...pretty tasty mash up the banana for less drippage....

Yes! That's my favorite way to eat PB & bananas, actually. Those La Tortilla factory tortillas are great!

If I have time or if I have a long drive to where I'm training, I usually have make this "power-roll" for breakfast (read the recipe in a cycling magazine a while ago)

Ingredients:
Tortilla
Peanut butter
Plain yogurt
Raisins
Honey
Wheat germ
Cinnamon

In that order. Roll. Fold bottom end (to avoid dripping) Eat & enjoy. Be fueled up.

For those of us (me) even more lazy, there are the trusty Baker's Breakfast Cookies. My favorite is the peanut butter flavor, but just about all of them are pretty darn good.

Any meal replacement powder. I suggest Myoplex, but that's just my preference (Or Prolab's Lean Mass Matrix Cinnamon Oatmeal). Buy a shaker bottle and have some water on hand and you have breakfast, snack, lunch or dinner.
