If you have a ipod, I highly suggest you down load it and listen. David Phinney, Simon Lessing and a Doctor have a great discussion on the topic.
I like to understand the mechanics of things. The post race recover discussion was extremely interesting. He talked about the science around nutrition and a little bit about how to dose out the calories during an event.
