May 22

Still buried but today I am going to attempt to get some housework completed before moving on to business stuff.  This place needs a scrub down!  I also need to finish mowing the backyard.  Hubby did get a little hedge trimming done yesterday evening so that helped out.  He's feeling bad about not being able to do things around here especially now with the new biz taking over my brain!  It's all going to be fine just a little behind schedule!
I managed to get the floors mopped and a bathroom scrubed down so far.  I have a friend in town that may be coming to the house so I need to get a few more things wiped down and dusted. 

My daughter has a number of contacts in the restaurant and bar business that she has gotten together for me.  I am happy about that so I can bounce some questions and get more resource info for things I will be needing soon.  It's always amazing that people are truly interested in lending a little help and info. 

So off to get somethig accomplished today.  First up, sweeping and mopping.

Breakfast: leftover chicken wraps with "rice"
Lunch: pear/walnut salad with grilled chicken, sort of paleo berry cobbler (I used quinoa flour for the crust, honey for a sweetener)
Supper: restaurant chicken/beef fajitas with pico de gallo and guac, 2 beers
Snacks: pecans, walnuts

Busy day.  I must complete the pricing, menu planning and general business stuff today!  First I will head out to crossfit, then home to get the yard work done.  I am feeling a little overwhelmed but good overall about everything.  I also need to make arrangements to get the 2nd fridge moved to the house.  Depending on how the first few weeks go, I might also need to be looking for some commercial kitchen space.  But first I need to complete all my certifications!  AAAAHHHHH!  Ok, one thing at a time. Breathe. Breathe.

Breakfast: bacon and fried egg
Lunch: fresh salad with chicken, toms, basil, orange bell pepper, cauliflower, vinegarette
Snacks: roasted almonds, walnuts
Supper: chicken/asparagus wraps with lemon dijan sauce over riced cauliflower, steamed brocolli, fresh green salad with pears and walnuts, creamy lemony ranchy dressing  This was a big hit and yummy!  It's a "repeat" as Tinkerbeth would say!

Tired! But I have house work to do and yard work to get done.  We did manage to sleep in a bit but of course, the dogs little clocks never turn off so I had to get up and let them out early.  A nap will be in order later today. 

I have food stuff to prep as well today from my co-op share.  It was a good share and I think this is going to work well for me as I move through my little adventure.  I also found an extra free fridge. My bff has one in her garage that I can have.  Hubs isn't thrilled with the idea of a 2nd fridge in the kitchen but it's a necessary now that I am a "personal chef"!!!  So funny to think of myself this way.  Price lists and menu planning must get done sometime today as well.  Menu is easier then pricing but I am working on it.

Breakfast: sausage patties and friend eggs
Lunch: pork steak with steam asparagus, tomato/basil salad
Supper: blt salad

IMTX volunteering, Aid station #4 with Team Red White Blue.

HOT was the word for the day and folks were not fairing well out there.

Busy start to the day but I managed to get a few things done around the house before heading north to The Woodlands to volunteer at IMTX.  I took my grandson with me.  He was a trooper and managed to entertain himself as well as help out.  Later in the evening, the runners were sharing their glowsticks with him so you could see where he was by the multi colored glow!  He also walked and chatted with a few people as they made their way through the aid station and then around the corner a bit.  He was all over the place!  We had a great time helping out.

May 18

Spent the afternoon with my daughter.  She has been evicted from her apartment and it's taken her several days to get inot another place.  It's been crazy and stressful for her.  Anyway, we finally got a signed lease at 5:30 pm and began moving her out of her apartment.  Her friends suck to say it mildly so it was me, her, and my grandson. We made pretty good progress but it got dark before we could get all the furniture moved so we will continue today.  We should be able to get the rest of the furniture in two trips.

My biz is moving ahead with some speed now.  It's amazing to me how quickly it's come together. My first paying client and I will meet for the in-home consultation next week and get the party started!!!  Pricing and menus are on the top of the list for this weekend.

Ok, I need to get off here and get busy.  Tomorrow is IMTX volunteer day.  I will 2:30-12.  I am looking forward to seeing all the BTer's out on the course!

I have a conference call at 10 am with my mentor/coach.  Sometimes I appreciate this coaching and other days, I just don't feel like listening to it.  I pretty much know what to do to get the business going, I have done it before, but she has some good tips so I will listen and take away what works for me.

Plus, I am still dealing with work stuff from the sales biz.  There is a project that has jumped onto the front burner and will need a little hand holding to get through the process as a sole sourced purchase.  More calls on this one later today.  Also, I received confirmation yesterday that a project that I thought was a full package purchase, is finally a full purchase and will go through as bid. There was a point in time that they were not going to buy the washer and only get the accessory items.  Whew! That money will be gravy for me!  There is a possibility to get a little commish from another company soon as well.  I need to get the contract info so I know what and when to expect it.

Crossfit! Then home to shower and take care of business errands.  I got my DBA at the county clerk, headed to the bank and set up a business account for Partners in Paleo.  I transferred some of the equity from my sales business to set up the cooking business.  Now on to the certification process.  It's a bit overwhelming but thrilling at the same time.  At least 6 people are interested and ready for me to get started cooking.  I have a lot of menu planning to do, packaging stuff to get worked out, pricing schemes, questionaires to finish, business cards, web page and more!  I am trying to breathe and take it one step at a time.

Life is running full tilt these days!  So much to do.  It's amazing to me to think that, maybe, just maybe, just on my own drive and skills, I will be able to provide for my family and do something that I love!  AMAZING!  Now, once the cooking gets going and is stable and steady, I will work on the crafting side of things!!! HA, HA!  I was just asked to make quilt tops for a friend plus button jewelry for my friends hair salon.  I may have to hire some employees!!!
