Why on earth are they called clipless pedals when you have to clip in to use them?

Because the old style of pedals had leather toe straps called "clips".  Get rid of those straps (clips) and you're clipless.

Actually, "clips" were the metal or plastic pieces that extended forward off the pedal and then up and over the toes, and held the strap open so you could insert your foot, then tighten the strap to hold the slotted cleat onto the pedal.
