Subject: Why don't the Olympic guys ride tri bikes?
I have been watching alot of World Cup races on triathlon.org, and I have noticed that all of the athletes ride road bikes with clip ons. I even noticed one guy riding a P3C (I think that's the Cervelo model) that had roadie bars with clip ons instead of aero bars. Is this because they ride in such large packs and rarely break off on their own? I find it interesting considering the vast majority of triathletes ride tri bikes.

They can draft so they cannot have long aero bars for safety.

Handling is more important than aerodynamics because of the draft packs.

They are allowed to have them and you will notice that most do have some type of aerobar setup.  Basically the rule says they cannot extend past the brake hoods and that they must be bridged.
