Subject: Quinoa
I made quinoa for the first time the other day. It was... just okay. I made it with vegetable stock instead of water, and added fresh garlic and fresh italian parsley. Meh.

I hear it is a great, whole-grain food, high in protein, wonderful for you, etc. etc. etc. Plus it is a good alternative for gluten-free people like myself.

I was wondering what else to do with it, and found this online:
Cooked quinoa is excellent in hot casseroles and soups, stews, in stir-fries, or cold in salads. The seeds cook very quickly, in only 15 minutes. Uncooked seeds may be added to soups and stews as you would barley or rice and quinoa is often substituted for rice in rice dishes. Dry roasting quinoa in a pan or in the oven, before cooking will give a toasted flavor, and it can be cooked in fruit juice to add character to the flavor for use as a breakfast cereal or in desserts. Cold salads consisting of quinoa and chopped vegetables or cooked beans make a quick, easy, and nutritious dish.

What have your experiences been with it? Recipes?

A friend of mine made it once for a dinner party she had (she is a vegetarian) and I don't know what she did but it was really tasty. I think it had raisins, and curry or something in it. It was very "fall-like" in the flavors it incorporated. The other time I made quinoa, it was out of a box and my ex and I were not floored by it.

I made it last night for the first time and it turned out really good, in my opinion. However, I used a ton of herbs (I used a blended mix I had on hand) when I boiled it and lots of garlic powder and some salt to add some flavor. I also boiled it with chicken stock for some flavor. I mixed it with sauteed vegetables and toasted cashwes once it was cooked and drained. I think if I hadn't been so heavy handed with the herbs/salt/garlic powder it would have tasted completely bleh. My boyfriend actually liked it, though initially he looked at it very suspiciously, I must say. Good luck!

I like to cook it using chicken stock and then once it cools mix in chopped tomatoes, chopped cucumbers, parsley and crumbled fat free feta cheese.

I have also made it and left out the feta and poured in a bit of Newman's Own Light Balsamic (sp?) viniagrette dressing.

My husband likes to mix in the Perdue shortcuts chicken into his servings.

This is going to sound like a strange combo, but...

My wife makes it with chopped tomatoes, red onion, cilantro, and other spices. This is great as a hot or cold dish. Personally, I am ok with the Red Mill Quinoa eaten like oatmeal in the morning with honey and toasted almonds. Yummy and great for you!

I love Quinoa and experiment all the time.  I like using rotel like tomatoes, black beans, cilantro, and bell peppers mixed into.  Sometimes I'll put in some corn, garbanzo beans, fresh spinach, and some italian flavored tomatos.  I just kind of expirement with a variety of different things--if you can make it with rice or pasta, give it a shot with quinoa!

Make sure you rinse the grain in cold water before cooking. There's a bitter residue on the grain. I have a fine mesh strainer that I use. I just hold it under running water for a minute or two.

As for cooking it, I think it tastes best cooked in beef broth or stock. I usually add some seasoning or another from Penzey's (great internet source for spices if you don't live near one of their stores).

I grew up eating it instead of oatmeal in the mornings. We put raisins, nuts, and a bit of brown sugar and some milk. Yumm!

You can get it at the grocery store - regular stores will probably only have the packaged kind with spice packets, etc, but regular quinoa can be found at places like Whole Foods. It's a good source of protein, which is what makes it different than most other grains. Plus, you can make it savory or sweet, as a side dish/main dish at dinner (like couscous or rice), or as a cereal.

A poster above said they mixed it with stuff after it was "cooked and drained".

Drained?

Huh?  Am I missing something?  Isn't it more like rice where it absorbs the water you put in and does not require draining?

Yes.

Maybe they meant after washing, and draining it, then cooking it.

The rinsing is super-key.  I didn' t know that the first time I made them and they came out HORRIBLE!  But I made some last week that was fine since I rinsed it.  I just used it like rice with a stir-fry.

I need a better way to rinse it though.  I used a regular strainer and I lost a few grains.

As with rice, quinoa can be cooked in the exact required amount of liquid OR cooked in a lot of liquid (more than will be absorbed by the time the quinoa is cooked) and then drained once it's done.

I like to use it instead of rice for some dishes that my wife and I prepare. I think it goes really well under a stir-fry.

Also, for those of you who are going to buy it from the store for the first time, here's a tip. When you go to ask someone in the store for quinoa, do not pronounce it phonetically (although they will still probably know what you mean), but rather pronounce it properly, Keen-Wah.

I believe my wife and I pronounced it wrong for a few weeks when we first started eating it!

I've added sugar and raisins, then eaten it for breakfast. Same for cous cous.
