Is there a proven theory to get the most out of your legs on the bike?
Whichever type of bike, mine actually is a mtb - This is my first year.
Do I setup my seat height to the full extension of my leg, and then lower
it 1"or 2" ?  Seeing as I'm already at a disadvantage, I'd like to get
the most I can out of my mtb before I hopefully get a roadie next year..
Already started dropping hints to the family!!!

There is a rule of thumb I have heard that gets you in the ball park.  Raise the saddle untill you leg is fully extended when your HEEL is on the peddle.

Technically, you should be abble to ride your bike with your heels on the peddles and your legs will just lock out.  There should be no rocking of the hips to reach lower.  That is a close approximation of saddle height.  When you move the ball of your foot to the peddle, you will be in the right seat height positions within a cm or two.

This is just a close approximation and doesn't handle fitting issues like saddle angel or fore/aft position.

Just read an article that the "static fit" measurement should be inseam x .883  from bottom of pedal stroke to top of seat.  That is technical, but you get the idea if you are just winging it.  Make sure it feels good.

On a mountaiin bike the heal on the pedal works pretty well.  On a tri bike that doesn't really apply.

A couple of measurements will tell you if you are in the right ballpark.

With your cycling shoes on, measure from the floor to the greater trochanter.

Then measure from the pedal spindle to the seat (with crank arms in line with seat tube); you want this to be 96-100% of the previous measurement.
