Subject: Spring rolls - share your recipes/suggestions

My local natural foods store sells locally made vegetarian spring rolls w/cabbage, carrots, water chestnuts and scallions in them. I bought some and realized I can make that myself.

So I started wondering what other good combos/ingredients would work with spring rolls. Any suggestions?

I am going to ease myself into a veggie diet and off animal meat, so all veggie recipes with protein content are appreciated.

YUM I love spring rolls!

I put in mine:
Lettuce of some kind (bib lettuce is good), sprouted lentils (crunchy kind), cucumber, carrots, peanuts, basil, hoisen sauce.
A local Vietnamese restaurant puts fried tofu inside theirs... so yummy. I've never tried to fry tofu though.

A great dipping sauce is peanut butter (melt in microwave a bit) mixed with soy sauce. Add in Thai chili garlic paste if you like heat.

Quick "fried" tofu:

Get extra-firm tofu, cut into rectangles, and squeeze out some of the extra moisture. Roll it in corn starch and pan-fry in whatever oil you please. Not quite the same as the deep-fried chunks in the sauce, but you can dip them in duck sauce, and they are quite tasty And would probably work well in spring rolls, since they're flat.

What are sprouted lentils? I like lentils.

Fried tofu is a good idea; I'll look into the nutrition and protein content. I'm cutting chicken, beef and pork out of my diet, so I need to get as much protein bang for my buck as possible.

I picked up a yummy dipping sauce that I'm going to mix up myself - soy sauce, honey, rice vine vinegar, garlic, ginger, scallions.

More suggestions for protein and nutrition rich ingredients, if you please!

I prefer summer rolls.

The veg. version I make has rice vermicceli, shredded romaine, cilantro, a little mint, parsley, marinated mushrooms, julieene cucumbers, and pickled carrots. Wrap all of it in rice paper that has been dipped in warm water, serve with peanut sauce or sweet chili sauce.

The pickeled carrots are made by soaking julienne carrots in rice vinegar, sugar, and ginger for a few hours.

For a non-veg version, I use shrimp or strips of rasted pork in place of the muishrooms.

I never take any of these home from a party.

The look like this, and are crunchy! I buy them in the same section as the salad-in-a-bag stuff. They are usually next to things like alphalpha sprouts in my store.

1 cup has 7g protein, if that matters.

We make summer rolls in our house on hot summer nights with rice paper wrappers, rice noodls (niether of which require cooking), thin sliced carrots & cukes, basil, cilantro, cooked shrimp and peanut sauce.
mmmmm....
The kids really enjoy making them themselves, and when kids make food they eat it too!

Did you know that you can easily sprout your own at home? A large glass jar, an adapted screen for the top, some water, and a window with indirect light- presto-- so soo fresh.
