Looked through the nutrition guide of p90x.  Seems like it is a lot of effort /time to prepare the meals.

Anyone have any suggestions for "eating rules" to meet the nutritional goals, but not following the book so strictly?

I will try to relook at it again tomorrow,  but I thought it was quite simple.

I've done 3 rounds of P90X and the nutrition guide is pretty much my way of eating now.  Just keep it simple and use the portion approach.  Depending on which phase you are in you really only have to track your Protein/Carbs/Fat intake.  Use the receips of you want to do something different or make a healthy meal for the family.

Phase one:  60% Protein/20% Carbs/20%Fat
Phase two:  40% P/20% C/ 20% F
Phase three:  20% P/60% C/20% F

Keep your proteins lean (chix, fish, lean steak, whey) and your carbs clean (whole wheats) and you are good to go.  Just make sure you eat 5-6 meals per day.
