What do you eat the day before and, more importantly, the morning of the race that works for you?

Dinner the night before is a pasta or rice dish with chicken. Breakfast the morning of is 'real' oatmeal (as opposed to instant) with butter and brown sugar, Emergen-C, hot tea (to calm the nerves). Depending on how long till the start of the race, a Luna or Clif Bar as well.

It depends on the length of the race. For my IM I had a week long food plan. For the half I had pasta 2 days before, light chicken dinner the day before and a bagel and strawberry smoothie the morning of. For anything shorter, I eat whatever. The day before, I don't eat anything different than any other day. On race morning I usually eat a bagel only because I can eat it in the car and a cliff bar 1 hour before the race (superstition)

The day before:

Nothing really special, except to make sure I'm not eating a lot of junk or fatty stuff.  I also try to make sure I'm sufficiently hydrated.  Dinner I usually go for chicken and pasta.

Race day:

1 to 2 Clif Bars, and Juice Plus Vanilla shake 2-3 hours ahead of time.  Shortly before my swim wave I have a Hammer Gel.  After years of trying different things, and having excessively cranky bowels and or reminders during the race of what I ate earlier, I have found this eating combination works the best for me.

Actual race nutrition depends on the distance.  Sprint races usually nothing but water, maybe HEED on a hot day.  Olympic, maybe a gel or two, and HEED or Perpetuam.

Afterwards:  Anything that isn't nailed down. :-)

Night Before - We have WWCD Winner, Winner, Chicken Dinner. Chicken breast on the Grill with either rice, coucous, or my all favorite Kraft macaroni and cheese. Breakfast is usually a zone bar and coffee.

For something like an Olympic distance race or a marathon:

Day before = focus on nutritious (low fat) food choices. Low fiber. Not too much protien. A light pasta dinner the night before.

Morning of = 1.5 to 2 hours before - a bagel with chicken breast, almond butter, and mango jam (sounds kind of odd, but tasty); a couple of cups of very strong coffee (mix of french press and espresso), some juice. Then I'll sip on diluted sports drink with a couple of electrolyte tabs dissolved in it and an apple while setting transition area.

    1/2 IM or IM:

Two days before = Pasta for dinner.

Day before = Pancakes and eggs for breakfast, then I go on a primarily liquid diet for the rest of the day. Smoothies made with filtered juice, ice and fruit. I'll have 2-4 of these throughout the day for a half and 4-6 for a full. I'll have a couple of small snacks of protien during the day.

Day of = 2-3 hours before the race - The bagel/chicken/almond butter/mango jam sandwiches (two if it's a full IM), a bowl of fruit (peaches are the secret ingredient), the same very strong cofee. Again sip on diluted sports drink with electrolyte tabs and an apple at the race site.

Peanut Butter/Nutella on Mutligrain bread for lunch and snack.
Pasta with butter/garlic or alfredo sauce for dinner.
    Fruits throughout the day.

Light easy stuff that I'm use to. Nothing heavy, spicy that will upset your sleep, or bathroom visits.

Race day, gotta have my coffee, then oatmeal, or Baker Breakfast cookie or two. Drinks.

Never experiment with anything new. Unless you know where the Porta Johns are.

So far Two Sprint Tri and 4 marathons, and haven't had the dreaded bowel movement.
