I just received my $210 Garmin Edge 500 on Ebay and I was curious to know how the performance is on the stem of a tri bike.  When you are tucked in the aero position the head would at least partially cover the stem blocking the satellites.  Is this a problem or not?

I have mine mounted between the bars just north of the stem and it works just fine.

I had mine on the stem and it worked fine with the exception that I couldn't see it very well when aero.

I'm a big fan of the PD computer mount that allows you to mount between the aero bars for easy viewing.  Or you can easily make one yourself with some PVC pipe a drill and some zip ties.

+1 on the PD mount. Works great with my 310. I don't know how big the 500 is, but the PD mount was the only one I found long enough to fit the 310.
