I think adjusting the brakes is common.  You might also need to change the pads if your race wheels are carbon and the trainers are not.

There is a brake alignment tool that looks very easy to use.  I haven't bought it b/c I"m lazy but they're cheap and look effective.  Let me see if I can find a link.  It just wraps around the rim and you set the brakes on it and pull the tool out.  Gives the proper spacing and toe in etc

This is not odd and especially with newer type race wheels.

For instance my race wheels are Hed C2, which are around 23mm wide. My training wheels are 19mm wide. Of COURSE I'm going to have to adjust the brakes. Generally I just leave the brake in the "open" state and that works well with the Heds without much more screwing around with, though.

Yup, I do the same thing with my old Zipp wheels.  At first I thought it might be unsafe in the "open" state, but really all it is doing is moving the caliper out so that it clears the rim providing proper spacing.
