But ya know what, while I can argue that swimming is a great workout and easy on the body impact-wise, do whatever gets you off the couch!

Have to agree with him here.  Any day you put in a workout and sweat is going to help you lose weight.  Watching what you eat is also a very important part if you want to lose weight.  Don't get the mindset that "since I did this workout I can eat this" and sweat more days a week than you don't and you will be fine.

There a is a good article by Matt Fitzgerald in the latest issue of Triathlete Magazine pg. 82 regarding losing weight during training.
He recommends the same thing that worked for me which is brief tabata type intervals and he gives some sample cycling intervals. he also recommends weight training to prevent muscle loss.

Just so you can manage your expectations:  You're not likely to lose weight and increase power concurrently if you're restricting calories at the same time. 

To answer the question in the subject. I would recommend running or cycling combined with weight training, but not swimming for weight loss.

IMHO 

Eat right

Swim, bike and walk.

Repeat until you drop some weight and slowly mix in the run. SLOWLY

^^^

And consider doing fixed ratio run:walk when you do add running to your routine.  As was said, running is hard on the knees.  Sore knees make it easy to miss workouts.
