You mention that you are doing cardio 4-7 times per week, be careful to give yourself time off to recover ... and reap the benefits of the work out. I used to think that it was the act of exercising that increased your muscle mass + fitness gains only to find out that happens during the next day or so as your body recovers and 'repairs' itself. Memphis in May has a pretty good triathlon the weekend of May 21st (I believe) ... it is an Olympic distance (1.5k swim/40k bike/10k run) and therefore pretty long distances for your first race, but you also have 5 months to get there. The indoor tri is a perfect way to get started while providing for a relatively near term goal to work towards.
