I'm planning on spending considerable time in the trainer this winter.  I do not plan on using my regular road wheel on the trainer and I also don't like the idea of changing to a trainer tire and back again on the same wheel.  If I were to get a whole separate wheel to use on the trainer, will any old 700c wheel do?  Also, my bike has a 10-speed cassette.  Will any old 10-speed cassette do as well?

Yep. Should work. Just be sure the hub has an 8/9/10 speed casette freehub and not a 5/6 or 7 speed freewheel. Anything newer than 1998 should suffice.

The LBS near me had a special on a trainer wheel/tire package.  It was just a regular looking wheel, nothing fancy, with a trainer specific tire on it.  I am not sure if it came with a cassette or not.  They had them for like $130.

Ask your local shops if they have any take off's or used wheels.
I just got a trainer wheel this week for 45 bucks, it weighs more than both my Reynolds wheels!
Works just fine.
I had 2 x 12-25 cassettes, so one is on my winter bike and one now on the trainer wheel/Tri bike, it seems better IMO to have the same gear ratios available.

Wheels that are cracked or cannot be trued are great for this. The LBS may very well give you one free just to get it out of their hair. The cassette you might want to be a bit more picky about because if it's worn, it'll wear your chain down faster than normal and then when you go to put your road wheel back on, it won't be in line with your chain and will give you fits until you replace the chain.
