I had been preparing for an attempt at a 5k PR on December 11th. However, today was the first day I could workout in about 10 days due to a recpritory illness.... Any reason I shouldn't just pick up where I left off on my plan and see how it goes?

The fact that you had a "recpritory" illness for 10 days does not bode well for you.  If it was a respiratory illness then you would have been able to pick up where you left off.  In all seriousness, you should be fine.  Rock it on the 11th.
