Put some in a water bottle on your behind-the-seat carrier, drop in the mentos.  It'd be a good way to keep drafters off your wheel, and maybe you'd get a smidge of forward propulsion at the same time.

I've actually done the Diet Coke and Mentos thing.  It's a lot of fun.  The key is to get the mentos in quickly before the diet coke starts coming out of the bottle.  We got about a 10 foot geyser.  Unfortunately, we didn't get a picture.

I hear that if you take a 2 liter bottle of coke, drain it to the top of the label, throw in a few sour straws, cap it, shake it, and toss it so that it lands on it's cap, that it will fly a good 20 to 30 feet in the air.   I can't comment on how I know this.
