Are these wheelsets pretty comparable or is one better than the other one?

I'd take the Shimano set over the Vision. The Shimano rins are slightly wider, which makes a better transition with the tire. Rolling resistance for the Shimano wheels is less. I was actually faster on Shimano 560 wheels than on 30 mm profile Williams 30's. I think the loose ball bearings are smoother than cartridge bearings.

The Shimano's… for no other reason than Shimano has very good hubs and uses these hubs even on the budget models. The Vision hubs are not of the same quality...

I agree with the hub quality observation. But, if you're a large, heavy powerful rider, the Shimano 501s are very flexy. I'd worry you could easily break a spoke or bend the rim under even normal riding conditions.

If you're buying these and you're a heavy rider, I might get hand built 32 hole, 3 cross laced shimano hubs and either Mavic open pro or Velocity Aerohead rims for the added durability. They will cost more initially, but save you from failure in the long run.
