Subject: need recipe ideas
Hey all, looking for some dip recipes. I'm hosting a holiday ornament/cookie exchange and need a light menu for the occasion as they'll be plenty of cookies on hand. Any ideas? Artichoke dip (btw way how do you make artichoke dip?) something festive and EASY!

thanks,
Cathleen

Artichoke dip (I'll warn you-it's really, really good, but not so healthy )

1 can artichokes, drained (I usually get the quartered, and even then, need to cut them a little smaller)

1 cup parmeasan cheese

1 cup mayo

~tablespoon of lemon juice

~several sprinkles of garlic powder

The lemon juice and garlic powder cut the mayo taste, so it's really a taste preference on how much you want to add. I used light mayo last time, and it tasted just fine. Mix all ingredients. I sprinkle paprika on top to make it look pretty. Bake in smaller casserole dish (I used an 8x8 last time) for about 20-25 minutes, until starts to brown around edges. Serve with crackers or tortilla chips.

It always gets rave reviews!

*I'm pretty sure I haven't left anything out, I just made it. I'll try to double check and let you know if I missed anything...Have fun!

Also, I think a tray of veggies and dip are a good idea. I've bought the ranch dip, or made it from a mix with sour cream.

go mediteranean for more healthier stuff.

pit bread wedges and veggies, olives (I know, not your favorite - but you can just put them out -easy!)

hummus or white bean dip

easy quick hummus - take a can of chick peas, a dollop of tahini if you can find it - skip it if you can't, minced garlic, olive oil, 1/4 cup parsely, dash cumin, ground pepper to taste.     blend.  serve.

It is even a complete protein

in a square pyrex pan, layer browned ground beef, refried beans,  cheese, black beans, and lightly crushed corn chips.  Bake in a 350* oven until the cheese melts. Spread on guacamole, salsa and sour cream (if you like) after you pull it out.  Serve with those little scoop corn chips.
