Does anyone eat this stuff? Men's Health has an article extolling it's virtues. I just tried one their simple recipies. mmmm, delicious!!! If anyone is interested let me know.

Here you go.  As a salad. Serve w/ chicken or pork.

1 cup uncooked Quinoa

8 asparugus spears

2 oz crumbled feta or goat cheese

1/4 cup green olives, pitted & chopped

4 tbsp chopped sun-dried tomatoes

1/2 tbsp olive oil + a drizzle for the asparagus

1 tbsp balsamic or red wine vinegar

s&p to taste 

 
Cook Quinoa as per box directions. Drizzel asparagus w/ olive oil and roast for 10 minutes.

Chop asparagus  into bite size pieces & add to the Quinoa w/ cheese, olives, sun-dried tomatoes, oil and vinegar. S& P, stir and enjoy!

  

Even my wife said, " that's it?" We proceeded to eat the whole bowl!

2 more I haven't tried yet but will soon.

just add to Quinoa.

1/2 cup dried cranberries, 1/4 cup chopped walnuts,, 2 tbsp crumbled blue cheese and 1 tbsp each balsamic vinegar and  oilve oil.

and

2 cups baby spinach or arugula,, 8 oz of grilled chicken and 1/4 cup of roasted red peppers.

 

If you try these please let me know.

I used to make Couscous all the time, but I've started replacing it with Quinoa sometimes. I like it, but it's still not nearly as quick and easy as couscous.

I eat it often, more than brown rice! And, it's my 7 year old daughter's favorite food. Good stuff!

I have eaten quinoa. The only reason why I at it was because it is gluten free. (I was diagnosed with Celiac) But anyways, its pretty good stuff. I mainly used it as pasta. You really can not tell the difference between this and regular flour. Although, the look is a little different.
Its great in all pasta dishes.
Try this:
1lb of ground meat
box of quinoa macronni
chopped green peper
chopped onion
salt peper and any other seasonings.

Its simple but yet healthy and enjoyable!

Epicurious has several recipes here. I've been wanting to try the stuff, as I'm loving working with other grains (farro, wheatberries, barley, etc.).

I just make it like couscous, but soak it for 5 mins first and cook it with a single bouillon cube.  Very tasty!
