Any suggestions for what to put in a special needs bag? I've never had to put one together and I really dont know what to put in. Do I just use it to restock gels and fluids, or should something go in there to mix it up, like solid foods and such? What does everyone put in their bags?

If your doing an IM race, then I would stick two frozen bottles of your nutrition, so by the time you pick them up, they will still be cold, but dethawed. I'll also put a white bagel w/peanut butter & honey in there, just in case I want something different. I'll usually only take a few bites, but it's a nice mental break from the liquid & gels.
During my first IM, my X-Lab setup fell off, leaving me without an CO2, or tubes. So I would also recommend putting in 2 CO2 cartridges, and a spare tube. It's worth the extra 10.00 to have them.
Also, any gels/bars/supplements that you would want. You put so much training, physical and mental into the race, don't let a minor oversight ruin your race.
Hope this helps.
Also, I know of people who will put letters from their significant other to help them through it.

Here's what I had in my bags at Ironman Lake Placid:

Bike:  spare tube, 2 CO2 cartridges, 2 bananas, pb&j sandwich, pack of peanut butter cookies, half dozen gels, 32 oz. bottle of gatorade.  I stopped for 2 minutes and chugged the gatorade, ate a banana, packed the rest of the food in my jersey.  The tube and CO2 was there for insurance (didn't need them).  If you are relying on the aid stations for all your supplys (gels etc) you may wish to put less in yours.

Run:  1 banana, pack of peanut butter cookies, 32 oz bottle of gatorade, spare pair of socks.  Used everything except the socks.

This is similiar to my plan.  I will have a spare tube and cartridges.  2 frozen bottles of fluid.  Then it will be a freaking buffet of RANDOM stuff. I have no idea what I will want to eat that day so I will pack just about everything.  Depending on how much time you might want to add chamois cream and sunscreen.

On the run I plan on having an extra shirt, electrolytes, 2nd pair of socks, baby wipes, chamois cream

if you go to the IM forum, this has been discussed a lot

At IMAZ I had this in my SN bags:

Bike: 2 C02s, 2 tubes, 3 gels, 1 Clif bar, 1 Payday bar
Run: Box of Mike&Ikes (best decision I made all week was to put those in), a few gels, a Clif bar, and an extra pair of socks.

On the bike I only needed the gels, and on the run all I took was a small handful of Mike&Ikes.
