It does not really matter as much what I eat as long as it is a meal shared with friends.

Even better if some or all of those folks are doing the race the next day

I usually go for fajitas, rice and beans. Or cheese enchiladas. Lots of chips and salsa.

I never eat pasta..makes me feel sluggish but I don't eat refined carbs either in general.

Favorite is salmon, brown rice and salad.

Like Waterdog said it is always best to share pre-race dinner with fellow racers.

I like a chicken stir fry recipe I got in an e-mail from CTS.  Although I have to exclude the peppers when eating it pre-race.

This was, supposedly, the pre-marathon meal for “celebrity chef and NYC Marathon finisher” Bobby Flay. I found it in Runners World and it’s become my pre-race meal anytime I’m somewhere with a kitchen:

• Sautee sliced garlic in olive oil until it just starts to brown, turn off heat & let it steep
• Boil a pot of whole wheat pasta (I use spaghetti)
• Strain the garlic out of the oil, set oil aside.
• Sautee some chopped bacon (I use turkey bacon) in the pan where the oil was until crispy.
• Drain pasta, pour the oil and bacon over the pasta, add some chopped parsley and parmesan cheese and serve.

I've been trying multi-grain pasta (Barilla Plus) and grilled chicken with olive oil, some garlic salt and whatever herbs strike my fancy. Small side of veggies or fruit. Mostly cuz it's easy.

Oddly enough, I aways race well on Mexican fare eaten around 7:00 PM before an 8:00 AM race. I'm not sure why.

I stay away from red meat (always do actually) and may also substitute fish such as salmon with a salad and some type of complex carbohydrate such as rice or simply prepared potatoes. I stay away from bread though, and simple sugars. I skip the coffee after dinner for a coffee and a Red Bull in the morning before the race.

When traveling, my favorite pre-race meal is anything eaten in the company of a bunch of BTers.

At home, it's my wife's pesto over whole wheat pasta and a green salad.

My first race is in 3 weeks, so I'm kinda new to the whole "pre-race" dinner thing. But I'm already thinking about it, and I'm pretty sure I'll stick with something that I know won't cause me any problems the next morning...plain, sauteed chicken breast with a little Barilla Plus pasta. Now...raceday breakfast is another story! Not sure what to do about that. My normal pre-workout breakfast is an 8oz yogurt cup sprinkled with a teaspoon of ground flaxseed and 2 teaspoons of Kashi 7-Grain Nuggets cereal...and 1 slice of whole-wheat toast spread with natural (no salt, no sugar) peanut butter. I've been eating this exact same breakfast everyday for years and it has never caused any stomach issues with me...so I think I'll stick with it for raceday.

I know you ruled out pasta, but this is special: Trader Joe's Flax Penne. It has Omega-3's out the wazoo, 64 g of protein per bag and it tastes better than wheat pasta. Really.
