Kim: Yes! It's not even that I want to just be skinny, but for someone to see that added benefit of training and eating right, it's motivating! Yay for salsa and kitchen fun! Tell us how it turns out.

Christina: I'm so glad you enjoyed it and you're totally welcome! Breakfast is such a hard meal for me because I don't like eggs, but now I can eat them often in quiche! Great job on sticking to the plan while out with friends. So hard!

Mike: Yay for cuddles and sticking to the plan! Keep it up.

Yesterday I had a super hard mountain bike ride. 20ish miles through hills and mud. Found out from ride coordinator that at one point it took us a 1/2 an hour to do a mile! The muck on the tires made for serious challenges and lots of carrying of bikes. Took us 5 hours to complete. I had only a coffee, a banana, and a protein bar that whole time so I allowed myself to enjoyed my Step-Mom's chicken enchilada and margaritas at NYE dinner without an ounce of guilt. Also enjoyed a couple glasses of Petalo Fragolino with the husband to ring in the new year. Perfect day that ended with the four of us lounging on our bed with all the electronics, daughter's favorite "babies", and bubbly wine.

Already back on track with some black coffee and quiche! Have a party in the afternoon at a friends, but will be easy to stick to the plan. Guamanians love to pile on the meat so it's easy to hide the fact that there isn't any rice on your plate, haha!

Hello!  Enjoying a paleo lunch today and really looking forward to finally slowing back into my normal routine.  I have some questions for those of you who know your way around the kitchen more than I:

1.  I loooove cilantro.  Can a person chop it all up and keep it in a container for continued use?  In the fridge or out?  Or is it better to keep it in its fresh state and just pull from it when you need it.

2.  What is the best way to keep chopped veggies fresh?  Containers?

I love veggies, but what usually happens is I buy a bunch and they go bad before I use them.  I'm going to use Sundays as my prep day so I figure I'll chop em all up and keep them in a container in the fridge all week.

Kim: It's best to keep it on it's stems and pull from it as needed. Also best not to get more than a single bunch at a time, and try to keep them dry in the bag. My mom wraps up cut veggies in paper towel and puts them in zip lock baggies and squeezes as much air out of it as possible. They do last much longer than just putting them in a zip lock. I'm super lazy about that, but should get in the habit since I'll be eating more fruits and veggies. Hope that helps!

Did well today, Monday, 1/2/12.

B: Paleo quiche and coffee with Splenda and French Vanilla coffee cream (a little indulgence to ease the pain of going back to work).
L: Salmon sashimi, a bbq pork stick and 1/2, and 2 small mangoes (needed carbs for indoor soccer).
D: Broiled carne asada and steamed broccoli (cooked rice for the kiddos).
Dessert: 2 glasses of cabernet.

I'm finding it easier to resist cravings. That's amazing!

Good morning everyone.  Happy 2012!  Thank you for doing this challenge along with me.  The accountability helps a great deal!  

I'll be honest in saying New Year's Eve was a little too much fun for me.  My brother had a great NYE party.  There were tons of great paleo friendly appetizers.  I ate dinner before I left anticipating the food there and trying to go full.  This is just a bad strategy for me.  I ended up eating a ton of food at the party.  It was all paleo, but I certainly did not need the extra calories. I know better now, and will not eat before heading out.  There are typically always paleo options here. People tend to be health conscious in San Francisco.  

Yesterday was marvelous!  My tri club had a New Year's Day plunge in the bay.  I watched.  They're nuts!  After that, I went for a great run with a friend (and a headache from the night before).   I made cioppino last night for dinner.  I absolutely love cioppino.  It was great having my brother and friends over to share in a good, healthy meal to kick off 2012.  Homemade cioppino is 100% Paleo.

Chris, I have to google cioppiio-whatever that is!  I have not heard of it!

My salsa making adventure was a success!  It is soooo delicious with just the right kick.  Love it.  Since today is my last day before heading back to work tomorrow I will be spending the greater part of the afternoon broiling chicken and since it's so nice outside I am going to bbq a few things as well.  I know the large part of my success will be in preparation.  I can do it! There is a large part of me looking forward to getting back to a routine...I do much better with a solid routine in place.

Blanda, my cravings are definitely lessening as well.  Mine are candy cravings...I have an absolute sweet tooth.  I can do without dairy, pasta, it's pure candy that I have a hard time with--love the stuff!  But, haven't touched it in days now.

Kim: Congratulations on your delish salsa! It definitely helps to be prepared to stay on a plan. I'm realizing that myself. I too need routine. I feel anxious without it and tend to get lazy about my training and healthy ways when I'm not on a set schedule, even if it's just sitting on my butt in the office.  The world is right when there's structure to my day, lol!

Speaking of structure and routine, gotta get the kids going for their first day back to school. I have a snoozing little girl sitting behind me in my computer chair. She woke up early having slept "early" (normal school time) last night, and it was too much, I guess. Out cold now. The boy is going to be a bear. He had a hard time falling asleep last night, hoi!

Hello!  Have a few quiet moments on my prep.  Boy, good to be back but rather than zoned out middle schoolers they were all so excited to hear about my break and tell me alllll about theirs! 

Had a great breakfast and lunch--spent 2-3 hours yesterday preparing food for this week--I am set!  Hubby has jumped on the bandwagon, although he's doing a bit of a more low-carb approach for some initial weight loss. 

So a few days ago I jumped on the scale and was down 4 pounds, now I'm back up three--I am at the tail end of my cycle (sorry if TMI!), though so I'm hoping that accounts for it!  My initial response was WTH and I was about to let it throw me into a tailspin, but I stopped it in its tracks.  That is something I've struggled with--that darn number, but to stop the freak out and move on is definitely a great step.

Kim:  Like you, I also spent a few hours preparing food for the week on Sunday.  This served me well considering I have no time to prepare anything while I'm teaching.  I commend you for teaching middle school.  I teach third graders.

Today was day 10!  I hope you guys are feeling as good as I am.  Despite being tired from work starting up again, I feel fantastic!  Plus, my pants fit slightly looser this morning when I put them on.  Hurray!!!!  I don't know if I've lost weight per say since I don't like scales, but I do know I'm slimming down  

Enjoy the remainder of the week, and I will check in soon.

Kim: Good job prepping your Paleo food and getting hubs on board. I imagine the gain is probably water retention that comes with the monthly issues. Awesome that you didn't let it get you down. Keep up the great work!

Chris: Yay for loose pants! I imagine getting back work is going to take some adjusting. I sit in a office by myself and I still wanted a nap bad! Got spoiled by them while on vacay.

I'm feeling really good about my efforts. Last night was another buffet that passed up on bad carbs. Just ate seafood, fruits, veggies, and drank some red wine.

I knew the noodles, rice, soups, and desserts would be so yummy, but it wasn't much of a struggle to eat in. That is a win for me! I'm normally so weak.

Gerat job, guys! Keep it up!

Hello!  I'm hanging in there!  Busy last few days and today will be busy as well.  Still going Paleo strong though, and glad of it.  Weekends are always a challenge for me, less structure and all that!  Today I'm at the school until late advising 8th graders running the concessions for 4 high school basketball games...uuuugh!  I did bring my food though, so I should be able to avoid the concession crap!  My plan is again on Sunday to prepare food again for the week.  My goal is to get more seafood into my evening meals next week.  Happy weekend everyone!

I've had a rough few days, came down with strep throat Friday evening and basically spent the weekend and yesterday in bed, eating here and there, not caring Paleo or not. Feeling human today and have my food ready to go when I head back to work tomorrow...the best thing for me is to get right back on track and I will!

Kim:  Sorry about the strep throat.  That's the worst.  I had it a few years ago and could barely do anything.  I hope you're on the mend.

Blanda:  I hear you about the soda.  I was dying for a DIet Coke around 1:30 today.  I refrained, but I do now it is the first thing I'll introduce back after the 30 days are over.  I don;t think I'll introduce anything else.  Maybe beans?  I have no problem with the no grains/dairy.

Kim: So glad you're on the mend! Yeah, eating right is very difficult when you're not feeling well. I know you'll be back at it strong again real soon!

Chris: I don't know why I dislike soda any other time, but once a month the craving is so strong, lol! Yesterday and today have been great and already feeling less bloated from having rice here and there. Rice and noodles have been, for the most part, have been easy to pass up, but I think with PMS and being low on energy last week had me craving them big time! Adding more fruits this week to combat that lack of energy feeling.

Kirk: Great your wife is on board with you! Makes preparing meals easier and you have a partner right there to motivate you.

I've been good. I'm back at that lack of interest in the rice and noodles. I'm not big on sweets, so that's not an issue for me. I just love FOOD! LOL!

Kim: I just use the packaged chili seasoning, but just replace beans with chopped up sweet potato. Easy peasy, and yummy! I put in a whole Jalapeno for kick. Hooey!

This has been a hard weekend so I had carbs to fuel. So glad I did. I was able to go hard for the Xterra bike course ride, which I hit all the hills on! Then completed the GEAR Adventure race this morning, which has HARD, and then my soccer game tonight. I was surprised to feel as good as I did after the first two activities!
